The countdown to Christmas has begun, so I thought I’d get you all into the festive spirit with this super delicious homemade buckwheat blini recipe. The blinis can be enjoyed cold or hot with your favourite toppings of choice. Head to my website to try some alternative topping options from beetroot carpaccio to quail eggs and smoked salmon and of course, they can be enjoyed with a cheeky glass of champagne.
They are super easy to make and really fun to decorate and share at your Christmas parties. Buckwheat flour is naturally gluten-free, but also has a delicious nutty flavour that I know you’ll love whether you follow a gluten-free diet or not!
100g of buckwheat flour
150ml of oat milk
1 tsp of baking powder
1 pinch of salt
Add all of the ingredients into a bowl and whisk together.
Fry in oil for a few minutes on each side until cooked through and golden. Then serve up with whatever toppings you like.
