If you need something super tasty that fits in with your #veganuary challenge (or you are just trying to eat more plant-based) then my Black Beans & Mushroom Meatballs are perfect for you! What’s great is that this meatball recipe works perfectly as a burger recipe too, so don’t be fearful to make these into some gorgeous meat-free patties! Enjoy.
Serves 3
Ready in 35 minutes

1 onion, diced
2 cloves of garlic, crushed
1 tbsp of olive oil
3 portobello mushrooms, finely chopped
1tbsp of chia seeds
1 can of black beans
2 tbsp of almond butter
60g of oats
1 tbsp of balsamic
1 tbsp of tamari
100g of sun-dried tomatoes
1 tsp to onion powder
1 tsp of chilli flakes
For the tomato sauce:
1 can of tomatoes
1 onion
2 cloves of garlic
1 tsp of balsamic vinegar
50g of sun-dried tomatoes
150ml of water
To make the meat balls add the oil, onion and mushrooms in a pan, fry for 6 mins until golden.
Blend with the rest of the ingredients until fully combined. Roll into 8 balls.
To make the tomato sauce place everything into a pan and simmer for 10 mins. Then add the balls and bake in the oven for 20 mins.
Season and serve with some pasta.
