Ad I’ve partnered with digital magazine and newspaper subscription app Readly – to make the step over to a plant-based diet as simple as possible. I absolutely love the unlimited access to thousands of newspapers and magazines all in one app – which includes amazing food mags for delicious recipe inspiration. You can even search by my name to see articles and some of my best recipes from across current and back issues. The subscriptions can have up to 5 accounts so everyone in my family has their favourite magazines together.
Despite the well-known benefits of eating a more plant-based diet, for our bodies and the planet, almost half of Brits never, or very rarely, eat a plant-based meal. That’s why I would love for you to join me on a challenge this Summer with Readly to try and recreate favourite meals – such as the classic summer bbq – but as Vegan / Veggie options.
Don’t forget you can also enjoy a free 2-month trial of Readly with this code until 1st August http://www.readly.me/vegan !!
110g of cooked rice
1/2 can of black beans
1 large sweet potato, cooked
50g of ground almonds
1 tsp of smoked paprika
1 tsp of garlic granules
1 tsp of salt
4 burger buns
50g of rocket
Add all of the burger ingredients into a blender and blitz until combined but still chunky.
Heat the bbq to medium heat.
Roll the burger mixtures into 4 burger patties and fry on the bbq for 3 minutes on each side until golden.
Slice the burger buns in half and char them on the grill for 2 minutes.
Add 1/2 mashed avocado, a handful of rocket and the patties to the buns and dig in.
Repeat with the rest of the mixture.
You can double the recipe and have the patties in the fridge or freezer for future burger days.
