This Avocado Kale Caesar with Sweet Potato Chips is such a delicious and satisfying meal. Thanks to avocado and nutritional yeast, the dressing is just as creamy and delicious as the traditional caesar dressing but is vegan and full of nutrients. This meal works perfectly eaten straight away or cold as leftovers the next day making it the perfect Monday meal to prep you for a delicious packed lunch later in the week.
Slice your sweet potato into cm thick chips, toss with the oil and seasoning and roast at 180C for 35 minutes
While the sweet potato chips are roasting, destem and roughly chop your kale
Blend the salad dressing ingredients together in a food processor
Massage the dressing into the kale and set aside
In a pan dry toast the pumpkin seeds for a few minutes until they pop
Stir the pumpkin seeds and avocado into the kale
Serve with the sweet potato chips
