Preheat the oven to 180C.
Slice the apple thinly and place in a large pan with the other fruits, 250ml of water and 1 tsp of cinnamon for 10 minutes.
Pop the oats, 1 tsp of cinnamon, oil/butter and sugar in a blender and pulse for 30 seconds.
If you are baking the dish in the pan then add the oats on top and pop in the oven. If you are baking in a baking dish then decant the fruit first spread evenly then add the oats on top.
Bake for 20 minutes and serve with coconut ice-cream.
