Mix the flour, sugar, baking powder, salt and cinnamon together in a bowl.
In another bowl mix the egg, milk, oil and vanilla.
Mix both together.
Heat some oil/butter in a pan on a medium heat, spoon out 2 tbsp. of the batter onto the pan and cook for 2-3 mins each side until cooked through. Repeat with the rest of the mixture.
Stack the pancakes and add the toppings.
