We all know vegetables are good for us. They are abundant in vitamins and minerals and when dressed up…can be the best part of the meal.
Most of us struggle to get them in. Mainly because we forget, eat processed foods or don’t really like them.
Here are a few tricks to sneak them in….
1. Grate them into your Bolognese
I love to add grated carrot and thinly sliced celery into my meaty bolognese it gives me more veggie goodness and absorbs the flavours so well.
2. Juice them
Juicing green veggies is so easy and means you can knock back a whole heap in one go.
3. Chuck them all in a smoothie
Green smoothies are a great way to start the day, you can feel smug that you have got some much nutrition into your diet. For newbees give my Avocado and Mango one a go, for green gurus go for my Green Goodness.
4. Cook up your old veggies
Old lettuce thats a little limp goes really well sautéed in coconut oil and grated ginger. I often roast an old cos lettuce with some olive oil and chicken for a great salad.
5. Always dress up your veggies
Don’t just steam veggies… that’s boring. Make delicious salad dressings, sauté them in coconut oil with chilli, pan roast them, add spices. Make them mouthwateringly good. In any doubt add olive oil, salt and lemon, its works… almost every time
