Pancake day is nearly here! Even though I love making pancakes all year round, there’s still something so exciting about having a whole day dedicated to it. 1 tsp baking powder
Pinch of salt
1⁄2 tsp ground cinnamon
1 ripe banana
150ml almond milk
1 tsp vanilla extract
Coconut oil or butter, for cooking
Honey or maple syrup, for serving (optional)
Pop you oats into a food processor and blend until flour like. In a bowl, mix the oats, baking powder, salt and cinnamon. Mash the banana then add to the dry ingredients along with the almond milk and vanilla extract. Heat a pan with coconut oil on a medium to high heat and spoon 2 tbsp. of the pancake mixture in. Cook for two minutes, flip, then cook for another minute until cooked through. Repeat with the rest of the mixture and serve however you like!
