Quick Healthy Dinner | Miso Salmon Broth

Miso Salmon Broth is one of my favourite quick healthy dinners to whip up after a busy day. My lovely boyfriend Kieran joined me in the kitchen to make this delicious dish!

Miso Salmon Broth

Serves 2

½ onion, diced
1 tbsp. coconut oil
1 tbsp. freshly grated ginger
½ chilli, chopped
2 courgettes, sliced into ribbons
2 salmon fillets
1 tbsp. miso paste
500ml stock

Put the coconut oil, onion, ginger and chilli into a pan and sauté until golden.

Once cooked, cut the salmon into bite size pieces and add to the pan with the courgette ribbons, miso paste and stock. Leave to cook for 5-6 minutes, or until the salmon has cooked through.

Serve in bowls (or mugs) and enjoy!

      It was stock (you can use veggie or chicken) and a nice big spoon of miso paste xx
