Healthy Lunches To Take To Work

I’m all for prepping lunch the night before or a quick and easy lunch to put together in the morning before I leave for the day. It’s a great way to save money and also eat a super nutritious meal during the day. Here are 3 healthy lunches ideas to take to work which will leave your colleagues with the ultimate food envy at midday.

Lunchbox Stack

100g Quinoa, cooked
100g Cherry tomatoes, chopped
1 lettuce, shredded
1 avocado, sliced
10g of sunflower seeds

Dressing:
1 tsp of mustard
1 tbsp of olive oil
1 tsp of apple cinder vinegar

Directions
Stack the veggies and grains on top of each other. Poor over dressing.

Smoked Mackerel Salad

2 smoked mackerel fillets
2 carrots, grated
1 cooked beetroot, chopped
1 lemon juiced
1 tbsp of olive oil
1 tsp of mustard
100g cherry tomatoes, chopped

Directions
Mix the oil, lemon juice, mustard together wit pinch of salt, mix the dressing with the beetroot, carrot and cherry tomatoes and top with the mackerel.

Chicken Salad with Courgetti and Pesto

1 large handful of basil leaves
20g of pine nuts
50ml of olive oil
Pinch of salt
1 tbsp of lemon juice
1 chicken breast
1 courgette
100g of mushrooms, sliced
100g of frozen peas

Directions
Rub the chicken breast in 2 tbsp of pesto.

Melt the butter in a pan and cook the chicken 6 minutes each side until cooked through.

Spirulize the courgette. Place the mushrooms in the same pan as the chicken and cook the for the last 5 minutes of the chicken time.

Remove the chicken and add the courgette rest of the pesto, sea salt, frozen peas and cook for 3 minutes, serve with the chicken on top.
