Vegan Strawberries and Cream Ice Lollies

When we think of strawberries we think of summer, which is why I’ve created some delicious strawberries and cream ice lollies for you to feast on.

Whether you’re having a summer BBQ, a Wimbledon viewing party or even just want a natural alternative to shop bought ice lollies, these are a seriously tasty treat.

I’ve used coconut yoghurt to give it that delicious creamy flavour without the dairy. It’s a tropical taste of heaven.

Serves 8 Ready in 5 minutes Good For

Directions

Finely chop the strawberries and place them in a small sauté pan, cook them on a low heat until soft with 1tbsp of water for 3 minutes.

Blend the strawberries with 1 tbsp of honey and the lemon juice until smooth, then pour into the lolly moulds and leave to the side.

Mix the yogurt with the vanilla and 2 tbsp of the honey/maple syrup until smooth, top up the rest of the lolly mould with this mixture and place in a stick. Pop in the freezer for 1 hour until set…then get stuck in!
