Vegan Protein Packed Seedy Granola Bars

I love baking these Vegan Protein Packed Seedy Granola Bars on the weekend so I have a tin full of snacks ready to munch on during the week. They’re packed full of seeds and nuts so will keep you feeling fuller for longer. If you’re looking for a 4pm pick me up that’s going to keep you going until dinner time, these are the bars for you!


Ready in 45 minutes Good For

Directions

Preheat the oven to 180°C.

Place the oats in a roasting tray and roast for 10 minutes until golden.

Once golden, put the oats to the side and and allow to cool. Blend the dates with the nut butter, cinnamon and vanilla extract.

Place the flax seeds, chia seeds, almonds, goji berries, protein powder, hemp seeds, oats and pinch of salt in a bowl and stir well. Pour over the almond milk and the date and almond butter mixture. Stir together then put the mixture into a baking paper lined tray and freeze for 30 minutes. Slice into bars and store in an air tight container.

These will last 3-4 days in an airtight container

    I tried these but they didn’t stick together, so I just used them as a type of muesli and had them with alpro natural yoghurt and mixed fruit. Delicious! But how do I get them to stick?? X
