Heat a large pot on a medium heat, add the oil and onion and fry for 5 mins. Add the garlic, rosemary, peppers, mushrooms.
Fry for another few minutes then add the lentils and pasatta. Cook for 20 mins then stir in the coco and balsamic.
Cook the pasta as per pack instruction then mix in the courgette. Serve together with some cashew or regular parmesan.
Season if not eating with kids, little ones don’t need extra salt in their diets.
