Turkey Meatballs And Udon Noodle Bowl


Sometimes there is nothing better than a big bowl of meatballs, and these are no exception. So easy to make and packed full of Asian flavours like tamari, ginger, garlic and sesame oil. Pile them on top of some colourful veg ribbons and you have the perfect, quick weekday dinner…or a weekend Lady and the Tramp moment!

Serves 2 Ready in 20 minutes Good For


Mix the turkey with 1 tbsp. of sesame oil, the tamari, ginger, garlic and mint leaves, roll into small balls (about a tbsp. of mixture) and leave to the side.

Cook the Udon noodles in a pan with boiling water as per pack instructions until cooked through, drain and rinse off any excess starch.

Heat 1 tbsp. of sesame oil and fry off the meat balls for 5 minutes until cooked through.

Grab the cucumber ribbons and roll them up. Place the meat balls, noodles, cucumber rolls, carrot, pepper, spring onions and plate like a rainbow bowl.

Mix the dressing together and serve on top or to the side, top with sesame seeds to finish.
