Tomato and Chickpea Curry

A few weeks ago, I asked you all what recipes you wanted to see on the website and the response was… curry! All the ingredients for this Tomato and Chickpea Curry can be found in any supermarket and this is a budget friendly dish too!

This curry is quick and oh so tasty. It’s a delightful veggie dish which still contains protein thanks to the chickpeas. All the spices are super healing for your body, especially the ginger which helps to boost the immune system.

I love the blend of the cumin and coriander and the kick of the chilli, this curry is light and beats any takeaway number.


Serves 2 Ready in 44 minutes Good For

Directions

  1. Dry fry the cumin and coriander in a large pot
  2. Finely dice the onion. Add in the coconut oil and onion to the pot. Sauté for 5 minutes.
  3. Crush the garlic and throw it in with the ginger and some cracker pepper, stir for a minute.
  4. Pour in the tomatoes and chickpeas. Throw in the chilli and garam masala.
  5. Cook for 30 minutes constantly stirring.
