Thanksgiving Pumpkin and Pecan Pie

This Thanksgiving Pumpkin and Pecan pie is to die for. Pecans are my absolute favourite nut to add to desserts – they go amazingly with sweet flavours! This autumnal twist on a pecan pie is such a delicious with a twist of pumpkin! Pumpkin is not just seasonal, but it packs in a nutritious punch with antioxidant vitamin A in abundance. So get your glow on this Thanksgiving and Christmas and finish your meal with this amazing take on an American classic.

Preheat the oven to 170 C.

To make the crust, place the flour in a bowl and add the butter and salt,  mix together with your hands until it resembles bread crumbs. In another bowl whisk the egg yolk and milk together. Mix these together to form a dough. Mix well then roll out 30 cm circle, place into your pie dish and prick the bottom.

Place in the oven for 15 minutes until golden while you make the fillings.

To make the pumpkin pie filling place mix all the ingredients together. Do the same with the pecan topping, reserving half the pecans for decoration.

Once the crust is out of the oven poor over the pumpkin filling then the pecan filling placing on the pecans to make it look pretty.

Pop in the oven for 45 minutes until the centre is almost cooked through, then remove and leave to cool.
