Thai Courgetti Salad

I love my Thai Courgetti Salad. It’s perfect for a work lunch box, and can be whipped up in ten minutes. The best part? It doesn’t need cooking!

I love adding raw carrots to salads. This is because they are a rich source Beta Carotene, which is a powerful antioxidant. Beta Carotene can be converted to Vitamin A in the body, which is a super booster for your skin.

The sesame seeds in the tahini based dressing are also a great source of calcium which is great if you don’t consume dairy. Calcium is vital for healthy bones after all!

I love whipping this up on a Sunday night and taking on-the-go for lunch throughout the week. It’s also great to make for a healthy girls night in!

Serves 2 Ready in 10 minutes Good For

Directions

Spiralize the courgettes, carrots and cucumber into thin noodles shapes. Finely chop the spring onions and mix them all together.

Finely chop the chilli, removing the seeds and blend with the rest of the dressing ingredients to make a smooth paste.

Stir the dressing in with the veggies until fully submerged and serve.

This will keep in the fridge for 2 days. It’s a great lunch box meal and you can add some extra prawns for protein.
