Sushi Sandwiches

These Sushi Sandwiches are the perfect addition to mix up your packed lunches. They couldn’t be easier or more fun to create and eat. Feel free to get creative with fillings, this recipe is my current fave a colourful mix of marinated tofu, avocado, carrot and mango – SO GOOD.  Watch my video of this recipe here to see them in action

Serves 2 Ready in 50 minutes

Directions

Preheat the oven to 200C
Cook the rice according to package instructions
soak the dates in boiled water for 5 minutes
add the sauce ingredients to the blender and blend until smooth and spreadable
slice the tofu into cm thick slices
spread the marinade over the tofu slices and bake for 15 minutes turning halfway
Slice the avocado, mango and carrot
Place the cooked and cooled sushi rice in a lined ramekin and press into shape
place the rice onto a sheet of nori, lay the chopped mango, carrot, avocado and tofu on top
repeat the preparation of the rice again and lay on top
wet the edges of the nori with damp fingers
wrap the edges over the rice and press into a ball
slice in half and serve with soy sauce
