Spicy Prawn And Sweet Potato Noodles


Prawns and Asian flavours go together so beautifully. My spicy prawn and sweet potato noodles perfectly combine the sweetness of the maple syrup and sweet potato with the savoury tamari, heat from the curry paste and the meaty prawns which makes it such a dreamy dish! A lovely, light supper for these sunnier days.

Mix the prawns with the sesame oil, ginger, tamari and maple syrup.

Place the coconut oil in a large wok or pan, add the curry paste, peppers and mushrooms and cook for 5 minutes. Add the sweet potato and spring onions and stir for a few minutes then add the prawns with the marinade and the peas and cook for 5 minutes until the prawns and veg are cooked through.

Serve hot, sprinkled with sesame seeds and chilli flakes.
