Cook the brown rice as per pack instructions.
Heat a pan with the sesame oil, add the onion and a pinch of salt and cook for 5 minutes. Add the turmeric, cumin, chilli, garlic and ginger and stir for a minute. Then add in the potatoes, butterbeans and peppers, stir for a few minutes then pour over the coconut milk and stock, peanut butter and cook for 30 minutes.
Steam the broccoli and mix with a pinch of the fresh chopped chilli and a pinch of sea salt.
Plate together and enjoy!
