Spicy Peanut And Butterbean Stew With Broccoli And Brown Rice

There’s something about stews that are so comforting. My spicy peanut and butterbean stew with broccoli and brown rice is the perfect dish to whip up when you’re in need of a big hearty meal. The spices give it the amazing flavour as well as the gorgeous colour from the turmeric and it will keep you feeling fuller for longer thanks to the butterbeans.

Directions

Cook the brown rice as per pack instructions.

Heat a pan with the sesame oil, add the onion and a pinch of salt and cook for 5 minutes. Add the turmeric, cumin, chilli, garlic and ginger and stir for a minute. Then add in the potatoes, butterbeans and peppers, stir for a few minutes then pour over the coconut milk and stock, peanut butter and cook for 30 minutes.

Steam the broccoli and mix with a pinch of the fresh chopped chilli and a pinch of sea salt.

Plate together and enjoy!
