Spiced Chickpea Tacos

These Spiced Chickpea Tacos are the perfect meal to share with friends and family. Everyone can make their own exactly as they like and with chickpeas as the main protein source these are vegan friendly too. Colourful fresh flavours like this are exactly what I crave all summer long. It’s such a fun way to eat as a group and a great way to get your kids involved in choosing what they want to eat. Serves 4 Ready in 50 minutes


  1. Preheat the oven to 200c
  2. Wash the sweet potato and chop into matchsticks
  3. Rub the sweet potato in the olive oil and smoked paprika. Place on a baking tray and bake for 35 minutes until cooked through
  4. Add all of the chickpea ingredients into a pan and sauté for 10 minutes.
  5. slice the radish and onion, halve the tomatoes
  6. Blend the avocado ingredients together.
  7. To make the taco shells place your tortillas in the oven and drape over two bars of the oven rack. Bake for 7 minutes at 180 C. Then remove carefully.
  8. Load up each taco with some rocket, sweet potato, cherry tomatoes, red onion, radishes, chickpeas and the avocado dip. Season and serve.
