Salt and Vinegar Coconut Chips

I bought some salt and vinegar coconut crisps from a health food shop the other day and just had to recreate them. They are so tasty, crispy and moreish.

I know coconut crisps sounds so odd as coconuts are usually associated with being a sweet food. Being British, crisps are something you see people eating all the time, however my alternative made from coconuts aren’t deep fried, full of nasties or refined salt.

Snack on my salt and vinegar coconut crisps through the day or add them on top of salads or soups for a bit of a crunch.

Preheat your oven to 170 C

Mix the vinegar, salt, honey and pepper together in a big bowl then add the flakes, and toss them so they are evenly coated in the salt and vinegar mixture.

Place the coconut flakes onto a baking tray evenly spaced. Bake in the oven for 10 minutes, stirring after 5 minutes so they bake evenly. You’re aiming for a golden colour, not much white but definitely not dark brown – no one likes a burnt crisp. Think about it like a suntan!

Let them cool thoroughly before transferring to an airtight container where they will keep for a few days.
