I’ve never been a big cheese fan, ever since I was little I turned my nose up at cheese. I often feel jealous when the cheese plate comes out and people dig in, as it’s the type of dish that brings everyone together and finishes a meal off! I love how colourful and light it looks too. So I’ve created a vegan cheese board which means I can join in this year!
Ok, so my vegan cheeses don’t taste exactly like normal cheese, but it has that same cheesy taste thanks to the nutritional yeast and saltiness thanks to the sun dried tomatoes. You might not have heard of nutritional yeast but it is an amazing ingredient that gives a vegan cheese it’s taste, you don’t need lots and it is incredibly good for you – loaded with B vitamins! You can grab it here if you can’t find it at your local health food store.

Place the cashews in a bowl and cover with water for 4-12 hours.
Drain the water and blend the nuts with the cider vinegar, nutritional yeast, lemon juice, milk, chopped chives, garlic an a pinch of salt. Blend until smooth and remove half into a small container, I like to use egg cups!
Throw in the sun dried tomatoes and parsley then blend again until smooth. Place this into another container.
Plate the cheese with the grapes, crisp breads, figs and olives.
