Raw Chocolate and Seeds Bars

I use nuts A LOT in my cooking and that isn’t always fair to those who can’t enjoy them. So these chocolate & seed bars are for you who are against the nut.

The main base is a super combination of seeds, sesame seed paste (tahini), delectable dates and of course some coconut too.

If you don’t eat dairy, then sesame seeds are about to become your best friend. Packed full of calcium these super seeds will keep you fighting fit in the gym.

These are such a great snack to have throughout the week. Make them on a Sunday and snack happy all week long.

Directions

To make the bars:

  1. Place the sesame seeds, pumpkin seeds, 40g of honey, the coconut oil, tahini, desiccated coconut and dates into the food processor and pulse until combined.
  2. Scoop into a small baking tray and pop into the freezer for 1 hour.

Just before the hour is up, it is time to make the chocolate…

  1. Melt the cacao butter, cacao powder, 10g of honey and 1 tsp vanilla with a pinch of salt on a very low heat in a pan, gently stirring with a wooden spoon.
  2. Cut the bars up into rectangles and poor the chocolate all over creating stripes.
    Pop in the fridge to set and enjoy!
