Quinoa, Kale and Broccoli Salad with Salsa Verde

When colder weather hits, we need comforting, warm and nutritious foods – which is exactly why I love this warm Quinoa, Kale and Broccoli Salad with Salsa Verde. It’s an amazing boost of antioxidants, packs a punch of flavour and the quinoa adds an extra bit of protein. I love this as a side dish or I’ll whip up a big batch and keep it in my fridge for a quick meal when hunger calls.


Serves 2 Ready in 20 minutes Good For

Directions

Rinse the quinoa and place it in a pot with a pinch of salt and 250ml of water, bring to the boil then reduce to a simmer for 12 minutes until cooked through.

While this is cooking, mix the salsa verde dressing together. Thinly slice the kale and place it in with the dressing to marinate.

Steam the broccoli for a few minutes until just cooked through, chop them in half lengthways then mix with the salsa verde.

Slice the avocado into a fan, cover with a little lemon juice and sea salt so as not to brown.

Once the quinoa is cooked through mix everything together in a bowl and serve with the fanned avocado, sesame seeds and chilli flakes on top.

    Hey Madeleine…I LOVE all your recipes. Would it be possible to have a separate tab under recipes for dressings/sauces? Sometimes I’m looking for something to dress up salad leaves or potatoes when I’m in a rush and your romesco sauce is a godsend! Also trying to find a healthy version of Japanese sesame (Goma) dressing which tastes authentic without all the additives. Any suggestions?
