Rinse the quinoa and place it in a pot with a pinch of salt and 250ml of water, bring to the boil then reduce to a simmer for 12 minutes until cooked through.
While this is cooking, mix the salsa verde dressing together. Thinly slice the kale and place it in with the dressing to marinate.
Steam the broccoli for a few minutes until just cooked through, chop them in half lengthways then mix with the salsa verde.
Slice the avocado into a fan, cover with a little lemon juice and sea salt so as not to brown.
Once the quinoa is cooked through mix everything together in a bowl and serve with the fanned avocado, sesame seeds and chilli flakes on top.
