Pumpkin Porridge with Grilled Banana and Lime

Autumn is here and that means pumpkin is in. I love this porridge, it’s so comforting and nourishing for the body. Grilled bananas have to be the best topping; rich in natural sugars and potassium they will fuel you right through the day. Topped with the zest of 1 lime this dish will tantalize your taste buds to infinity and beyond. Tip: you can make the extra pumpkin mash the night before with your dinner and use the leftovers for the porridge to speed up the time. If you can’t find pumpkin anywhere swap it in for butternut squash or sweet potato, both work really well! To make the mash all you need to do is peel the pumpkin, chop it into inch cubes and steam it for 30 minutes until cooked through. Then blend it into a mash/puree.


Serves 2 Ready in 19 minutes

Directions

  1. Place all the ingredients apart from the banana and lime in a pot, stir well. Heat this up on a medium to low heat for 15 minutes, stirring every minute.
  2. Cut the banana in half, heat the coconut oil on a medium heat in a pan. Place the banana halves into the pan and fry each side for 1 minute until slightly bronzed.
  3. Place the banana half on top of the bowl of porridge and and zest the lime over the top.
  4. Enjoy hot!
