Prawn, Chilli and Brown Rice Linguine

I love a good pasta dish and my prawn, chilli and brown rice linguine really hits the spot! It’s super quick to whip up with minimal effort, but also totally delicious.

Prawns are high in protein which means you will stay fuller for longer. I like to buy my fish from a sustainable fishmonger.

Directions

Cook the pasta as per instructions in slightly salted water.

Heat the butter or oil in a pan, add the shallot and sauté for 5 minutes then add the garlic and a pinch of salt.

Stir for 30 seconds, don’t let the garlic brown, then add the tomatoes, tomato puree and the chilli, stir well and cook for 2 minutes. Add the prawns and cook until pink then throw in the pasta, olive oil and a pinch of salt and pepper.

Once everything is piping hot pour into bowls and enjoy.
