Mini Cinnamon Spiced Apple Crumbles

Mini Cinnamon Spiced Apple Crumbles

I love a mini apple crumble, in fact I’m eating one for breakfast as I write this.

This crumble isn’t overly sweet but it still hits that post dinner sweet craving. I love to use cooking apples; raw, these are ridiculously sour but once cooked they just blossom into life! If you can’t find any cooking apples, then feel free to use your favourite kind of regular apple.

The apple is spiced with a blood sugar regulating cinnamon and antioxidant-rich cardamom. Topped with crumbly oats which have been sprinkled with coconut sugar, this crumble is the perfect dessert.

I have made these as mini desserts, so you’re less tempted to eat more than a portion. But don’t worry, there’s nothing bad in these babies.

  1. Preheat the oven to 160 C (fan).
  2. Heat 1 tbsp of oil in a pan. Slice up the apples into slithers (removing the core) and add the apples to the pan. Cook on a low heat for a few minutes stirring. Add in 1 tsp of cinnamon , 2 tbsp of sugar/honey and the cardamom pod. Let this cook for 10 minutes until the apple is cooked through.
  3. With a spatula, scrape the apple contents into 4 small ramekins. In the same pan, melt the coconut oil, then take it off the heat.
  4. Stir in the oats, 2 tbsp of sugar/honey, 1 tsp of cinnamon and a pinch of salt and stir well until fully combined.
  5. Then with the spatula, scrape the crumble onto of the ramekin and pop into the oven for 20-25 minutes.

Serve with coconut yogurt, natural yogurt or some fresh berries and cinnamon.
