Kimchi Veggie Bibimbap

This Kimchi Veggie Bibimbap is the ultimate meal for when you want something tasty and healthy – fast! This bowl takes less than 20 minutes to make and is such a beautiful and flavoursome way to use up whatever veggies are in season or beginning to look a little sad. The addition of kimchi provides a gut friendly boost of spice and for a traditional kick add in plenty of Gochujang chilli sauce. I hope you love this recipe as much as I do.

Directions

Rinse and cook your rice according to pack instructions

While your rice is cooking, slice your veggies into thin strips

In a pan heat up some sesame oil and add in your prepped veggies, season with soy sauce

Once your rice is cooked, for a traditional crispy texture without a hot stone bowl you can continue to cook the rice once the water has been absorbed with a little sesame oil

Fry your eggs in sesame oil

Assemble your bowl by layering the vegetables over your crispy rice and adding an egg on top
