Herby Potato Wedges

These delicious Herby Potato Wedges are the perfect way to enjoy any potatoes you may have kicking around. A delicious take on potato wedges which are as nostalgia as a portion of chips. A perfect snack to enjoy in front of a movie, in the afternoon when you are looking for something more substantial or as a side. I’ve served mine with a fresh basil and lemon yoghurt sauce but feel free to get creative with dressings. Enjoy xx

Serves 4 Ready in 50 minutes Good For , , , , , , ,


Preheat the oven to 180c

Begin by washing your potatoes to remove any dirt from the skin, scrubbing if necessary

Slice the potatoes into wedges and toss with the olive oil, salt and pepper

Roast the potatoes for 45 minutes

While the potatoes are roasting, mix together the dressing ingredients, keeping some of the basil aside

Sprinkle the remaining herbs over the roasted potatoes
