Healthy Christmas Rocky Roads

Treat your friends and family this year with a batch of these Healthy Christmas Rocky Roads. They make a great snack, dessert or hot drink partner! These are a deliciously nutritious alternative for a standard rocky road and are so tasty that you won’t even know the difference. The Rocky Roads have raw cacao as a main ingredient which is a great antioxidant, just what you need around Christmas time.

Directions

Toast the nuts in a pan, for 4 minutes until golden the leave to cool.

Blend the dates, coconut oil, milk, cacao together in a blender. Mix with the cooled and toasted nuts and dried cranberries

Place in the fridge to set for at least 2 hours. Slice into bars and serve.

    Hi Madeleine! I just made these and I have a question. As I took them out of the fridge I noticed that the coconut oil has separated from the rest of the mixture in some parts, plus the liquid mixture did not seem enough to cover all of the nuts. What did I do wrong?

      They won’t last very long at all, because they are so yummy! But you can keep them in a box in the fridge for up 3 weeks! xx

      I don’t see why not, but I don’t think they will last long enough to make it to the freezer… they are the dream! xx
