This amazing asian inspired dish of Grilled Tuna and Soba Noodle bowl with Broccoli and Edamame makes a delicious bowl of goodness. Broccoli is an amazing vegetable bursting with vitamins and minerals and perfectly compliments the succulent Grilled Tuna.

I love this as a warming dinner in both summer and winter, and as a balanced meal rich with protein and low GI carbohydrate it’s the perfect meal for you gym bunnies!

Directions

Mix the tamari, ginger, garlic, red chilli and sesame oil. Place the tuna steaks in the dressing to marinate.

Cook the noodles as per the pack.

Heat 1 tbsp of coconut oil in the pan and throw in the mushrooms and spring onions. Cook for 5 minutes then add the broccoli, edamame, carrot, stock and tamari dressing and cook for 3-4 minutes. Throw in the cooked soba noodles and cook for another 2 minutes until the sauce thickens then plate.

Heat a pan to a high heat. Grill the tuna steak 1 minute each side, slice them so they are 1inch thick and put on top of the noodles, scatter over the sesame seeds and cashews and serve hot.
