Mix the tamari, ginger, garlic, red chilli and sesame oil. Place the tuna steaks in the dressing to marinate.
Cook the noodles as per the pack.
Heat 1 tbsp of coconut oil in the pan and throw in the mushrooms and spring onions. Cook for 5 minutes then add the broccoli, edamame, carrot, stock and tamari dressing and cook for 3-4 minutes. Throw in the cooked soba noodles and cook for another 2 minutes until the sauce thickens then plate.
Heat a pan to a high heat. Grill the tuna steak 1 minute each side, slice them so they are 1inch thick and put on top of the noodles, scatter over the sesame seeds and cashews and serve hot.
