Cut the sweet potato into small chunks. Heat the coconut oil in a small pan. Add the sweet potato with a pinch of salt and sauté for 15 minutes until cooked through.
While this is cooking chop up the broccoli into small pieces and steam for 4 minutes until just cooked through.
Mix the tahini, ginger, lime juice and a tbsp. of water together. Stir well and add a pinch of salt and pepper then leave to the side.
Finely chop the kale. Add the kale, edamame beans, steamed broccoli and sesame seeds to the sweet potato once it is cooked through and sauté with a pinch of salt.
Plate and drizzle over the dressing and throw in the pumpkin seeds.
