Rinse the quinoa and place in a pot with the water and a pinch of salt. Bring to the boil and let it simmer for 12-15 minutes until the water has evaporated.
In another pan melt 1 tbsp of the oil. Crush the garlic and add it to the oil with the thyme stirring for 30 seconds. Throw in the spinach and allow it to wilt down, then add the quinoa and stir well for 2 minutes.
In another pan heat the remaining oil and fry the eggs to your liking (1 minute for a nice runny yolk).
Then plate the spinach and quinoa with an egg on top. Delish!
