Gluten Free Muesli


Shop bought muesli can often be packed with sugar, so I always think it’s a healthier and tastier option to make your own! Get the glow with my gluten free muesli, bursting full of energy boosting superfoods.

The dried goji berries and apple mixed with the energy rich oats will keep you going all morning. I’ve added cinnamon to this delicious breakfast recipe as it helps to stabilise your blood sugar levels – plus it’s such a delicious spice that packs that extra flavour at any time of the year.

I love making a batch of this at the weekending and enjoying all week long. It’s also a super simple dish to take out on the go.

Serves 4 Ready in 25 minutes Good For ,


Preheat the oven to 180 C.

Mix the oats, coconut flakes and pumpkin seeds together with the cinnamon, vanilla and coconut oil. Spread out over 2 large roasting trays and roast in the oven for 20 minutes until golden.

Let them cool then mix with the rest of the ingredients in a small container. Serve 1 cup with your choice of plant based milk and fresh fruit like figs and berries.

    Great recipe! I love the idea of roasting it, but without the honey. The problem with so many supermarket granolas is that they are so packed with sugar – it’s ridiculous. Mueslis too. IMO – the only one worth looking at is wyldsson – The great thing about this recipe is that you can get some of the roasted taste but without the sugar. One of the things that I love about granola is the taste of the roasted raisins – it’s the same sort of flavour that you get from the currents in buns that are at the surface – they’re always the ones that I pick at as soon as I take them out of the oven. :-)
