Fig and Maple Chia Pudding

I love Chia Pudding. If you’ve never tried it, Chia seeds soak up water to become a jelly-like pudding. They’re super hydrating, and are bursting with four times more iron than spinach! This Fig and Maple Chia Pudding is gorgeous.

Pop some berries and nuts on top for a breakfast or dessert that is bursting full of nutrition!


Serves 2 Ready in 122 minutes Good For


Mix the milk and chia seeds together with the vanilla and maple syrup.

Stir and let this sit for a few hours or overnight.

Stir in half the fig slices and top each one with the rest.

Serve cold with added seeds, fruit and nuts.

    Hi Madeleine, I love trying your recipes and was excited about this one – but I have a question. What kind of consistency should the pudding be? When I first made it, the seeds kind of settled at the bottom with a few floating on the surface (I used almond milk). This didn’t seem right to me so I added 4 more spoons of the seeds and after another night in the fridge the pudding was still of a consistency of a soup. Is that how it should be? Or should it be more like porridge? Thanks in advance! Xx

      I also struggled getting the right consistency. Then, instead of leaving the pudding in the fridge I left it at room temperature overnight and it worked! Hope this helps :)
