Detox Coconut and Broccoli Soup

During the colder month’s it’s always nice to have delicious and quick soup recipes on hand to whizz up in your blender and take to work! This detox Coconut and Broccoli soup is creamy, packs in the green nutrients and has an added kick from a spicy chilli.

Coconut milk is such a delicious soup ingredient, it gives a great coconut punch and makes the texture creamy without adding dairy!

Serves 2 Ready in 25 minutes Good For

Directions

Finely chop the onion and red chilli. Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 5 minutes until golden. Add the garlic, ginger, chilli and sautée for 2 minutes.

While this is cooking, chop up the broccoli then throw it in with the onion mix. Stir for 30 seconds with a pinch of salt then pour over the coconut milk and veggie stock. Simmer for 20 minutes then blend until smooth.

Top with fresh herbs, nuts and seeds for added omega goodness!

    Hi Madeleine, I have been following you for a little while now. You are truely insparational and have really helped me get a sense of what I might want to do one day. I have one slight problem though, I am still at school and I did not choose to take science as I really dont enjoy it but I think I may need it in order to study nutrition. Did you take science at school, is there a way to work around it?
