Chicken Meatballs with Courgette and Chimichurri

This easy peasy Chicken Meatballs with Courgette and Chimichurri recipe is the perfect weeknight dinner. It’s quick to whip up in an instant, or prep each different element, cook the meatballs and keep in the fridge for a couple of days so you have a nutritious meal on hand whenever you need it!


Serves 2 Ready in 15 minutes Good For

Directions

Place the chicken, ginger, garlic, maple syrup and tamari into a food processor, process until the chicken is minced.

Roll the chicken into meatballs.  Heat the coconut oil in a pan and sautee the chicken meatballs for 5-8 minutes or until cooked through.

While they’re cooking, spiralize your courgettes and lightly steam.

Combine the chimichurri ingredients together. Place the meat balls over the courgetti and cover in the chimichurri dressing!
