Preheat the oven to 180 C.
Cut the chicken breast into strips, about 4 per breast. Mix the flour, garlic, thyme, a big pinch of salt and pepper together in a bowl. Dip the chicken into the spice mix and place in a roast tray. Pour over the oil, making sure the chicken is evenly coated. Roast in the oven for 12-15 minutes until cooked through.
