Cauliflower Chickpea Masala


This Cauliflower Chickpea Masala is a total family favourite, so warming, hearty and full of the power of plants! I love using this vibrant spice blend with a variety of different veggies depending on what I have on hand for a simple but always crowd pleasing dinner. Serves 4 Ready in 35 minutes Good For , , , , ,


1. Combine the spice mix

2. Heat the oil

3. Add the onion and fry for 5 minutes

4.Add the garlic and ginger, stir for 30seconds

5. Add the spice blend, cauli and chickpeas, stir for another 30 seconds

6.Add the coconut milk and passata

7.Simmer for 20 minutes.

8. While the curry is simmering prepare your accompaniments, rinse and boil the rice according to package instructions and wilt your spinach in a pan with olive oil.
