Brown rice pasta with broccoli, pesto, toasted almonds and peas

There’s nothing we all love more than a speedy dinner. The last thing you want to do when you get home from work is prepare a meal with lots of ingredients that takes a long time time to cook. Whip up this Brown rice pasta with broccoli, pesto, toasted almonds and peas for the ultimate speedy dinner which packs in the flavour. When I’m in a hurry I’ll use shop bought pesto but I do find that if you have the time it’s best to make your own. Try this dairy free cashew pesto, and keep it in your fridge as a dip with veg, spread on toast, or mix through your scrambled eggs!

 


Serves 2 Ready in 15 minutes Good For

Directions

Rinse the pasta under cold water, then cook as per the instructions on the packet.

Steam the broccoli then pop into a pan along with the pesto, half the almonds, peas, mushrooms and a large pinch of salt and pepper. Stir well for a few minutes until everything is coated and the mushrooms are cooked through. Add the pasta to the pan and stir until the pasta is fully coated. and the veg mixed through evenly.

Serve with the rest of the flaked almonds and a sprinkle of chilli flakes for the perfect speedy dinner.
