BBQ Chicken kebabs with mango salsa

When the weather gets hotter, out come the BBQs, and out come the awesome BBQ recipes! These BBQ chicken kebabs are my go-to recipe.

It’s a very simple recipe that’s bursting with gorgeous fragrant flavours from the cumin, turmeric, coriander and cinnamon. Mixed with a juicy mango salsa, you’ve got yourself the most amazing summer BBQ meal.

Directions

Soak your wooden skewers in water for 10 minutes so they don’t burn.

Place the cumin, coriander, cinnamon, turmeric and a big pinch of salt and pepper in a bowl. Mix well together and leave to the side.

Chop the chicken into bite-size chunks and dip into the spice mix coating evenly.

Place the chicken on wooden skewers and brush with oil.

Heat a griddle pan or the BBQ to a medium heat and add the chicken for 8 minutes turning every few minutes until cooked through.

While this is cooking make the mango salsa by peeling and finely chopping the mango into slithers. Finely chop the spring onions and chilli and mix with the mango and lime juice.

Serve together with a smile.
