American Style Gluten Free Pancakes

What’s pancake day without a HUGE stack of pancakes drizzled in chocolate?! My American style gluten free pancakes don’t just look amazing, they taste so good too. I’ve topped mine with some berries, melted chocolate and nectarine, but you could pimp your pancakes however you like. Excuse me while I munch on my pancake stack..

Directions

Mix the flour, sugar, baking powder, salt and cinnamon together in a bowl.

In another bowl mix the egg, milk, oil and vanilla.

Mix both together.

Heat some oil/butter in a pan on a medium heat, spoon out 2 tbsp. of the batter onto the pan and cook for 2-3 mins each side until cooked through. Repeat with the rest of the mixture.

Stack the pancakes and add the toppings.

Serve warm

      Hi babe, you could just leave the sugar out and add more maple syrup at the end for sweetness xx

      I use a variety; buckwheat, spelt, quinoa, rice flour- whichever is in the cupboard xx

    Ah I am sorry to say that these did not work for me. They looked great but they were crumbly :(

      Ah, that’s such a shame. Maybe next time try adding a little more liquid so they really bind together. xx

      Hi babe, so glad you loved them. Depending on the size if them I would plate up 2-3 per person, topped with delicious fruit and drizzled with maple syrup is the perfect amount xx
