Sugar alternatives: Rice Malt Syrup

So we are all on the search for the perfect sugar replacer…something to quench our taste buds with some sweetness.

Rice Syrup is a newish sweetener that is pretty great!

Its made by fermenting rice with enzymes to breakdown the starches which are then cultivated and cooked into a syrup.

Its mainly glucose and has no fructose sugar. 

The reason why this is important is fructose is the sugar that is metabolised differently to other sugars in the body. There has been a lot of research done into the issue of fructose overloading in the diet.

Rice malt syrup takes about 1.5 hours to digest in the body making it a reasonably slow release sugar.

I love it as you can use it like honey or as a substitute for table sugar in a recipe, ratio: 1 to 1. 

Its a great sweetener to have in the cupboards.

Be careful with your rice malt syrup as some prepared have shown arsenic to be found! So try and go for a reputable brand like Biona. You can get some from this great website.
