Christmas always brings about a time for eating and usually this comes in the form of chocolates. Whether it is chocolate on the tree or in your stocking, you know you will be tempted in some way.
I have created a healthy chocolate ball recipe that will leave you totally satisfied. These balls are completely raw which means they are full of enzymes, minerals and nutrients. The thing I love about these balls is that one of the greats nutritional benefits comes from the raw cocoa. Cocoa is unbelievable as it reduces your risk of cancer due to the high levels of antioxidants in cocoa reduce the amount of free radicals in the body.
- 100g pitted Medjool dates
- 100g activated almonds (available in health food stores or you can make your own)
- 100g shredded coconut
- 3 TBSP raw organic cacao powder
- 30g raw coconut oil
- 1 tablespoon chia seed
Firstly soak the dates in water for 20 minutes so they soften slightly. In a food processor blend the almonds, coconut, cocoa and chia seeds. Melt the coconut oil.
Slowly add the dates and melted oil into the food processor until thick paste is made. Roll the mixture into bit size balls with your hands then place into the freezer for half an hour, then refrigerate until required.
